Mushroom grower Dominic Thomas began his micro farm for oyster mushrooms in the spring of 2015 using waste coffee grounds from local cafes as the growing medium.In a once empty shop in the centre of the Cotswold town of Stroud in Gloucestershire the enterprise was designed to have minimal environmental impact.The growing compound is collected from local cafes and is diverted from going to waste and there is little water or energy in the production and no chemicals are used. The mushrooms are sold locally to food retailers and on the award winning farmers Market in the town centre so distribution doesn't rack up fuel and environmental costs either. Customers can also buy kit bags to take away and grow musrooms from at home.The Fungusloci project is one of Sustainable Creativity CIC and received help from Stroud District Food Grants.
