Ingredients: 3 tbs virgin olive oil. 1/2 lb ripe plum tomatoes, skinned, seeded, and finely chopped . 2 large garlic cloves, minced. 2-4 tbs dry white wine or water. Salt and freshly ground pepper. 2 tenderloin steaks (filets mignons), each about 3/4 inch thick. 4 pitted black olives, halved or quartered. 1 tb chopped fresh oregano. Arugula leaves and oregano sprigs for garnish. Step 1. Heat 2 tbs oil in a pan and add the tomatoes, garlic, wine or water, and salt and pepper to taste. Simmer over gentle heat for 10 minutes. Meanwhile, brush the remaining oil over a cast-iron pan and heat until very hot. Step 2. Add the steaks to the pan and fry for 2-4 minutes on each side for medium-rare, or to your taste. Add the olives and oregano to the tomatoes, and taste for seasoning. Step 3. Cut the steaks diagonally into thick slices across the grain, and arrange on warmed plates.
